Vegetable Biriyani recipe in pressure cooker

Ingredients:-

  • ghee – 1 tblsp
  • bay leaf – 1
  • cinnamon sticks – 2 inches
  • star anise – 1
  • cloves – 6 no
  • cardomom – 3
  • pepper – 10 no
  • cumin seeds – 1/2 tsp
  • onion – 1 (chopped)
  • ginger garlic paste – 1 tsp
  • cubed vegetables – 4 cup (carrot, potato, beans, peas, cauliflower, mushroom etc)
  • curd – 1 cup
  • red chilly powder – 1 tsp
  • turmeric powder – 1/4 tsp
  • salt – 1 tsp
  • biriyani masala powder – 1/2 tsp (can also use Garamond masala powder)
  • biriyani rice – 1.5 cup (soaked in water for 30 minutes)
  • Pudhina & Coriander – 1 cup (chopped)
  • water – 2 cups
  • simla mirchi -1 (chopped) /optional
  • fried onions – 2 tsp /optional

Ghee, bay leaf,cinnamon stick,star anise,cloves, pepper, cumin seeds, cardomom, onion, ginger garlic paste,cubed vegetables, curd, red chilly powder,turmeric powder, salt, biriyani masala,biriyani rice,coriander,& pudhina

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Method:-

1. Heat ghee in the pressure cooker. Add bay leaf, cinnamon sticks, cloves, pepper, cumin seeds, star anise and Cardamom.

2. When it splutters add chopped onion and ginger garlic paste.

 

 

 

 

 

 

 

 

 

 

3. Now add chopped vegetables and curd. Then add red chilly powder, turmeric powder, biriyani masala powder and salt. Mix well.

 

 

 

 

 

 

 

 

 

 

4. Now spread biriyani rice(soaked in water for 30 minutes) above it.

5. Sprinkle coriander and pudhina above it in a layer. Put one more tsp of ghee above it. Add 2 more cups of water.

6. Close the pressure cooker and keep it in sim or low flame for 25 minutes.

 

 

 

 

 

 

 

 

 

 

7. Fry chopped Simla mirchi in oil. Spread over the biriyani and serve hot with any raitha
