Vada Pav recipe | Dry chutney | Mumbai street food explains the step by step preparation of both red garlic chutney and vada with potato. This street food is generally served with deep fried green chilly and dry garlic chutney. Pav is the bread. It is available at colleges, schools, office canteens, on the streets and restaurants all over Mumbai. Making Vada Pav is actually very easy, as we can make the chutney in advance. It is always good to prepare any recipes at home than buying outside as it is hygienic and healthy. Now a days vada pav is served along with a slice of onion, sauce etc giving a modern touch.

Firstly let us see about the preparation of red garlic chutney:-
Vada Pav recipe – Ingredients for red garlic chutney:-
  • garlic cloves – 10 – 12 number chopped into two halves
  • peanuts/ groundnuts – 3 tsps
  • dry coconut powder – 3 tsps
  • red chilly powder – 1/2 tsp
  • salt – to taste

1. Dry roast chopped garlic for few minutes till black spots appear on it.

2. Again dry roast peanuts in the same pan till you get brown or black dots on the peanuts.

3. Similarly dry roast coconut powder till it turns brown in colour.

4. After that put all the roasted ingredients in a plate and allow it to cool down to room temperature. Add red chilly powder and salt.

5. Grind it along with red chilly powder and salt to a coarse powder and this is the red garlic dry chutney served along with vada Pav.

Secondly let us see about the preparation of vada:-
Vada Pav recipe –  Ingredients for preparation of vada:-
  • Potatoes – 6 number
  • pav / bun – 8 number
  • asafoetida / perungayam – pinch
  • turmeric powder/ manjal podi – 1/4 tsp
  • green chilly  1 + garlic cloves 4 ground coarsly
  • salt – to taste
  • fresh coriander leaves – 1/4 cup (finely chopped)
  • lemon juice – 1 tsp
Vada Pav recipe – Ingredients for batter:-
  • gram flour/ besan/ kadalai maavu – 1 cup
  • red chilly powder/ milagai podi – 1/2 tsp
  • turmeric powder/ manjal podi – 1/4 tsp
  • cooking soda/ baking soda/ sodium bicarbonate – pinch
Vada Pav recipe – Method of preparation of vada:-

1. Cook 6 potatoes in a pressure cooker for one whistle and once pressure is released, drain water, remove skin and keep aside.

2. Mash well the potatoes, add salt, mix well and keep it ready.

3. Take all the ingredients given under For batter in a bowl.

4. Add water and make it into a thin batter (bjji consistency) Keep it aside for 15 minutes to set.

5. Grind green chilly and garlic coarsly.

6. Heat one tsp of oil in a pan, add asafoetida.

7. When it splutters add turmeric powder.

8. Now add coarsly ground green chilly-garlic mix to it and sauté.

9. After that add mashed potatoes with salt to it and mix well.

10. Add chopped fresh coriander leaves and lemon juice. Mix well.

11. Make round balls out of the potato mix.

12. Heat oil in a fry pan for deep frying. Dip the balls in the gram batter prepared already.

13. Cover completely with the batter and deep fry in oil.

14. After frying to golden brown on all sides, remove and keep it on a tissue to remove excess of oil. Fry some green chillies too when oil is hot to garnish.

Vada Pav recipe – Way of serving:-

15. Now divide the Pav / bun into two halves. Spread red garlic dry chutney inside.

16. Place the vada in between. Close and serve along with fried green chilly, sliced onion green chutney or sauce as you wish.
