Super soft delicious Idli recipe | மென்மையான இட்லி செய்முறை explains you about the ratio of rice and urad dal to be mixed and also about the preparation of softest idlis. Idli is the traditional breakfast in South India, and also called as rice cakes. See history of idli .You can make idli by adding four parts of boiled rice and one part of whole white lentil (urad dal) soaked in water separately for 4 to 6 hours and then grinding separately into fine batter, mixing together well after adding required salt and water and then allowing to ferment. After fermentation batter rises in height.

You can put this fermented idli batter in the mounds of an idli tray after placing a wet muslin cloth above the tray. Keep this tray above the boiling water in an idli pan. Cover the tray with a lid and allow to cook under steam for ten to fifteen minutes. Serve these idlis in pairs with desired chutney, sambar or idli milagai podi.

Super soft delicious Idli – Ingredients:-

First let us see the utensils needed to prepare idli.

1. An idli pan to fill in water upto 3 inches from the bottom and keep in the stove.

2. Idli tray with round moulds to make idli.

3. A lid to close the pan.

4. A plate to transfer idli after cooking.

5. A white cloth according to the size of the tray. Holes are made in the cloth at the place of the holder in the tray. (If you do not have a white cloth, use a new white handkerchief) this cloth should be washed after using everyday, and should be kept along with the pan.

Super soft delicious Idli recipe | மென்மையான இட்லி செய்முறை – Ingrdients to make idli batter:-

  • Boiled rice/ idli rice/ puzhungal arisi – 4 cup (‘milagi rice’ or ‘IR 20’ rice preferred)
  • Urad dal/ ulundham paruppu – 1 cup
  • Fenugreek seeds/ vendhayam – 1 tsp
  • Salt/ uppu – to taste (around 2 tsp )
  • Idli pan (all the five items I have mentioned above)
Super soft delicious Idli – Method of preparation:-

1. Firstly wash and soak rice with enough water in a container for four hours.

2. Similarly wash and soak urad dal and fenugreek seeds in a separate container for four hours.

3. After four hours grind soaked urad dal and fenugreek seeds for 30 minutes in a wet grinder.

4. Grind soaked rice separately to a fine batter after grinding urad dal.

5. Add 2 tea spoon of salt and mix both the batter well from top to bottom. Add water if necessary as a result it will be like a dosa batter in consistency. Close the container and keep it for fermentation for 8 – 10 hours or overnight.

6. After fermentation batter will increase in quantity so that it will come up to the top of the vessel.

7. Secondly fill one quarter of the idli pan with water in other words upto 3 inches from the bottom.

8. Further more put a wet cloth above the idly tray and place it above the idli pan with water as shown in the photo below.

9. Thirdly add idli batter to the mounds in the tray using a round spoon.

10. After that close the pan using a lid and allow it to cook for ten minutes.

11. During this processes idli batter will be cooked well under steam and idli will be ready. After 10 minutes open the lid and transfer cooked idlis to a plate by lifting it and putting it upside down in a plate.

12. Finally remove the tray at first and the cloth after that. You can sprinkle little water above the cloth before removing so that it will be easy to separate idlis from the cloth.

13. You can serve idlis with desired chutney.

Next let us see how to make Masala idli (Thalicha idli ) This can be prepared with left out idlis in the evening or on the next day morning

 Super soft delicious Idli – Ingredients needed for masala idli:-
  • idli’s – 4 number
  • mustard seeds/ kadugu – 1/4 tsp
  • urad dal/ ulundham paruppu – 1/2 tsp
  • asafoetida/ perungayam – pinch
  • onion – 2 tblsp (chopped)
  • green chilly – 1 (slit)
  • red chilly – 1 (broken)
  • salt – 1/4 tsp
  • pepper and cumin powder – 1/4 tsp

Method:-

1. Wash and break idli’s into small pieces using your fingers.

2. Heat one tsp of gingely oil in a fry pan. Add mustard seeds, urad dal and asafoetida.

3. When it splutters add chopped onions, curry leaves, green chilly and red chilly.

4. Fry for one minute and now add chopped idlis.

5. Mix well and sauté for one minute. Now add salt and pepper cumin powder. Idlis will stick to the bottom of the pan. Stir continuously and remove that portion which sticks to the fry pan and mix with the masala idli. It will be crispy and adds taste to the dish.

6. Transfer to a serving bowl and serve along with idli podi.
