Midhukku vathal preparation | மிதுக்கு வத்தல் செய்முறை is a type of vathal which we prepare in chettinad area of Tamilnadu. This is a climber found in fields and we use the fruits to make this vathal. Now a days fresh fruits were not available in market but we get dried fruits in shops. Midhukku vathal is available in the market in almost all shops in chettinad area. We process these dried fruits by adding salt and buttermilk and we can store this for years. Let us see how to prepare this chettinad midhukku vathal.

Midhukku vathal preparation – Method of preparation:- 

1. Firstly buy dry midhukku vathal which is available in shops. Further wash once under running water to remove dusts if any and then cut each fruit into two pieces and keep it ready.

2. Secondly take butter milk and salt (kaluppu) in the ratio of 4:1 in a container. Mix well the salt and buttermilk and soak chopped midhukku vathal in it and allow it to set overnight. All fruits should be completely immersed in buttermilk and that will be the amount of buttermilk needed.

3. Next morning fruits will absorb some amount of buttermilk and so it will be fluffy.  Thirdly remove the fruits from buttermilk and spread them in a mat and dry them in sunlight. Keep the remaining buttermilk closed and safe which we will be using in the evening. In the evening midhukku vathal will be dried to some extent. Collect them and put those dried midhukku vathal in the remaining buttermilk which we have saved in the morning in a container. Close the container and let it stay for the next night.

4. After that again in the  next morning remove the soaked vathal and dry them in sunlight. Evening put the dried midhukku vathal in the remaining buttermilk. Repeat this process for 3 to 4 days until the vathal absorbs the buttermilk completely.

5. Finally when the vathal is completely dried and if there is no water content in it you can store it in a container. You can store this for years and deep fry when ever needed.

6. Further heat oil for deep frying in a fry pan and fry this vathal until it turns dark brown or black and serve along with curd rice as side dish during meals.
