I share  Pav Bhaji recipe | Mumbai Street Chat | பாவ் பாஜி with you today which  is the most popular Mumbai street food or fast food. Mixed vegetables like cauliflower, potato, carrot and peas are cooked, mashed and spiced. It is served along with soft toasted buns/pav. There are so many varieties of Mumbai street food. I have already posted a few varieties such as Pani PuriChole Bhature, Aloo SamosaGobi manchurian , Vegetable Cutlet ,  aloo Puri masala and Vada Pav .   This is one of the best evening snacks for children.

Ingredients:-

For pressure cooking:-

  • potato – 2 cup (chopped)
  • cauliflower – 2 cup (cut)
  • carrot – 1 cup (chopped)
  • green peas – 1 cup

For Bhaji:-

  • cumin seeds – 1 tsp
  • garlic – 2 tsp
  • onion – 1 cup (finely chopped)
  • shimla mirchi – 1 cup (finely chopped)
  • tomatoes – 1 cup (finely chopped)
  • salt – to taste
  • butter – 1 tblsp (to add on bhaji)

  • pav bhaji masala powder – 1 tsp
  • red chilly powder – 1 tsp

For toasting:-

  • Bun/Pav – 8-10 no
  • butter – 1 tblsp

For Serving:-

  • onion – 1 cup (finely chopped)
  • lemon – 1 cut

Method:-

1. Cook chopped cauliflower, potato, carrot and peas in a pressure cooker for 2 whistles with 3/4 cup of water and salt. Don’t add much of water, then you will not get the required consistency.

2. Heat one tblsp of butter in a pan. When it is hot add cumin seeds.

3. When it sizzles, add chopped garlic and saute.

4. When raw smell of garlic goes, add chopped onion and saute till it changes to light brown.

5. Now add chopped shimla mirchi and saute for 3-4 minutes.

6. When it gets soften, add chopped tomatoes and cook for few minutes. sprinkle salt.

7. Meanwhile open the pressure cooker and mash the cooked vegetables using a masher.

8. When tomatoes are done, add pav bhaji masala powder and red chilli powder and mix well.

9. Let it be in low flame for 2 minutes.

10. Now add mashed vegetables to the pan.

11. Mix well. Add butter, close and cook for 2 minutes.

12. Cut pav/bun into two halves horizontally. spread the butter on both the sides using a butter knife. Toast it in a pan. Turn the sides and toast until you get a golden brown colour.

13. Now serve them with hot bhaji with dollop of butter on top and chopped onions with lemon.
