Mutton liver fry recipe or eeral varuval is very easy to prepare at home and it tastes delicious. Beginners and bachelors can also try this very simple recipe. Pepper and fennel seeds gives extra flavour to this non-vegetarian recipe. Try this and share with me about your results. You can use one tea spoon of vinegar to clean mutton liver.
Mutton liver fry recipe – Ingredients:-
To clean:-
- mutton liver / eeral – 1/4 kg
- water – 1 cup
- vinegar – 1 tsp

To marinate:-
- mutton liver / eeral – 1/4 kg
- turmeric powder / manjal podi – 1/4 tsp
- red chilly powder / milagai podi – 1/2 tsp
- coriander powder / malli podi – 1/2 tsp
- garam masala powder – 1/4 tsp
- fennel seeds powder / sombu podi – 1/4 tsp
- ginger-garlic paste / inji-poondu viludhu – 1/2 tsp

To fry:-
- oil – 1 tsp
- mustard seeds / kadugu – 1/2 tsp
- fennel seeds / sombu – 1/2 tsp

- curry leaves / karuvepilai – few
- onion – 1 (chopped)
- green chilly / pachai milagai – 1 (slit)
- salt – to taste
- pepper powder / milagu thool – 1/2 tsp
- corriander leaves – 1 tblsp (chopped)
- lemon juice – 1 tsp

Mutton liver fry recipe – Method of preparation:-
1. First of all chop mutton liver into small square pieces and after that you should clean mutton liver. To clean mutton liver, add mutton liver with water and a spoon of vinegar and allow it to rest for 15 minutes. You can also use turmeric powder instead of vinegar and after 15 minutes wash well 3 to 4 times with excess of water. As a result of this process flavour of liver will be removed.


2. Secondly mix all the ingredients such as red chilly powder, coriander powder, garam masala powder, fennel powder, ginger-garlic paste and turmeric powder along with cleaned mutton liver in a bowl. Do not add salt now but you should add salt after liver gets cooked. Importantly allow mixed ingredients to rest for 30 minutes.


Mutton liver fry recipe – Method of preparation:-
3. After 30 minutes heat fry pan with one tea spoon of oil and add mutton liver pieces to the hot pan. Fry in low or medium flame for 3 to 5 minutes till it changes colour.

4. Then add 1/4 cup of water, close and cook in medium flame for 15 minutes. However open and check in between. Water oozes out at certain stage. You can check by cutting liver piece with ladle and see whether it is cooked. Switch off the stove when liver gets cooked.

5. In another fry pan heat one tea spoon of oil and add mustard seeds and fennel seeds.

6. When they splutter add chopped onion, green chilly and sauté until it become soft.

7. After that add cooked liver pieces along with required salt.

8. Keep stirring and add pepper powder and chopped coriander. Mix well and switch off the stove.

9. Finally add one tea spoon of lemon juice and therefore it tastes delicious. Transfer the dish to a serving plate and serve hot.
