Mixed Vegetable paratha recipe | காய்கறி பரோட்டா is a variety of bread prepared where vegetables are mixed with spices to the flour itself. No side is dish necessary for this parathas because all spices and vegetables are added to the flour itself. It tastes so good. Can be prepared for carrying.

This is a very healthy recipe because all vegetables are added to the flour mix which contains vitamins and minerals. In the other variety of vegetable paratha we used to stuff the mix, but here we mix it with the flour itself, which improves its taste. Healthbenefits of vegetables are numerous.  This can be prepared in evenings as a lunch box recipe. It’s easy to prepare if you follow the instructions given below.  Now let us go to the recipe.

Ingredients:-

  • wheat flour/ godhumai maavu – 2 cups
  • salt/ uppu – to taste
  • oil – 1 tsp
  • water – as required

Vegetables needed for masala mix:-

  • potato/ ululaikilangu – 1
  • peas/ pattani – 1/2 cup
  • carrot – 1
  • cabbage/ muttaikose – 1/2 cup
  • onion – 1
  • ginger garlic paste/ inji Poondu paste – 1 tsp

Masala powders:-

  • red chilly powder/ milagai podi – 1/2 tsp
  • turmeric powder/ manjal podi – 1/4 tsp
  • coriander powder/ malli podi – 1/4 tsp
  • cumin powder/ seeraga podi – 1/4 tsp
  • garam masala powder – 1/4 tsp
  • salt/ uppu – to taste

Method:-

1. Cook potato and peas in steam or by adding water. Remove skin mash well and keep aside.

2. Heat oil in a pan, add chopped onion, followed by ginger garlic paste and all vegetables. Sauté for a few minutes. Add masala powders and mix. Then add mashed potatoes and peas. Mix well and switch of the flame.

3. Take wheat flour, salt and oil in a bowl. Add the cooked vegetables with masala to it. Add required water (very little) and mix into a soft dough.

4. Using chapati pin make chapattis.

5. Heat chapathi pan, add few drops of oil and fry chapathi’s on both sides until you get brown dots on both sides. Serve with any side dish.
