Maharashtrian Goda Masala recipe | கோடா மசாலா

Maharashtrian Goda Masala recipe | கோடா மசாலா is a special spice blend used in Maharashtrian cuisine. This masala can be used in vegetarian dishes like stuffed brinjal, lady’s finger and also in non-vegetarian dishes. I have given the spices in two groups. Ingredients given under (I) should be roasted one by one separately in few drops of oil. Ingredients given under (II) can be dry roasted together without oil. Refer – Kaala masala

Ingredients:- (I)

  • coriander seeds/ dhania/ malli – 1 cup
  • cumin seeds/ seeragam – 1//2 cup
  • caraway seeds(shah jeera) – 2 tsp
  • niger seeds (ramtil, karale) – 3 tsp
  • dry coconut – 1 cup
  • sesame seeds/ ellu – 1 cup
  • asafoetida/ perungayam – 1 tsp
  • kush kush (poppy seeds) – 1/2 tsp (do not roast)
  • turmeric powder/ manjal thool – 1 tsp

Ingredients:- (II)

  • red chillies/ vara milagai – 5
  • cloves/ kirambu – 25
  • black cardomom – 4
  • green cardomom – 5
  • cinnamon/ pattai – 2″ piece
  • black pepper/ milagu – 1 tsp
  • stone flower (patthar phool) – 3 tblsp
  • star anise (chakra phool) – 4
  • cobra’s saffron (nagkesar) – 1 tsp
  • bay leaves – 5-6

Method:-

1. Dry roast all the ingredients under (I) in low flame, one by one separately in few drops of oil, till it turns colour or pops up. (specially coconut and sesame should be roasted well)

2. Dry roast all ingredients together under (II) together until you get a nice aroma. Spread all the roasted ingredients in a plate and cool down to room temperature.

3. Grind all the above roasted spices into a coarse powder in a mixie and store it in a container and you can also refrigerate it. This can be stored without refrigeration for one year. Half to one tsp of this masala powder can be added in all side dishes, vegetarian as well as non-vegetarian dishes to improve taste and flavour.

4. You can also add 2 – 3 tsps of goda masala in a rice dish as well as in lentil dish. It enhances the flavour and taste of the dish.
