Gobi | cauliflower manchurian recipe | காலிப்ளவர் மஞ்சூரியன் is a tasty indo-Chinese cuisine served as starter or snacks. Prepared by frying cauliflower called as “phoolgobi” in hindi mixed with maida and corn flour with required spices. Served along with desired sauce. Preparation time: 30 minutes

To serve: 3 persons

Ingredients:-

  • gobi / cauliflower florets – 300 gms
  • maida – 5-6 tsps
  • Corn flour – 3 tsp
  • red chilly powder – 1/2 tsp
  • pepper powder/ milagu thool – 1/4 tsp
  • salt/ uppu – to taste

For manchurian sauce:-

  • garlic/ poondu – 1 tsp chopped
  • ginger/ inji – 1/2 tsp
  • onion – 1 (chopped)
  • green chilly – 1 chopped
  • bell pepper/capsicum/ kudaimilagai – 1/2 (chopped)
  • soya sauce – 1 tblsp
  • tomato sauce – 1 tblsp
  • red chilly powder – 1/2 tsp
  • salt – 1/2 tsp
  • sugar – 1/2 tsp
  • water – 3 tblsp

  • Oil for deep frying and chopped spring onions to garnish.

Method:-

1. Clean gobi and cut the florets to medium size. Add boiling water to chopped gobi and leave it for 5 minutes.

2. Drain water completely and spread on a clean cloth until no moisture remains on the gobi.

3. Mix maida, corn flour, red chilly powder, pepper powder and salt with required water in a bowl. The consistency has to be medium and not too thick or very watery. If it’s thick the manchurian becomes hard. If it’s too watery it may not stick to the florets. So it should be medium to coat the florets well.

4. Heat oil in a pan, and in medium heat, fry the florets coated with batter to golden orange. Drain excess oil by placing them on a kitchen tissue.

5. Heat oil in a wide pan and add garlic, ginger and chillies. Saute for a minute or two. Then add chopped onions & capsicum. Saute them on a high flame for 2 minutes. Add soya sauce, red tomato sauce, sugar and salt. Slow down the flame to low or medium. Mix and add water. Cook on a medium heat until the sauce thickens.

6. Turn off the stove and check for taste. The sauce has to be slightly sour, sweet & hot. If needed you can adjust the salt as well. Allow the sauce to cool for 1 to 2 minutes.

7. Add the fried cauliflower and stir. Garnish gobi manchurian with spring onions and serve immediately.
