Egg Carrot Spinach Poriyal recipe is a healthy Side dish which you can serve as side dish with rice. You prepare this with healthy spinach, carrots and eggs. Salt, cumin and pepper powder were added to increase it’s taste and flavour.
Egg Carrot Spinach Poriyal – Ingredients:-
- Eggs – 2
- Onion – 1 (chopped)
- Spinach – few (chopped)
- Carrot – 1 (chopped)
- Oil – 1 tsp
- Cumin seeds – 1/2 tsp
- Salt – to taste
- Pepper – for garnishing
Egg Carrot Spinach Poriyal – Method of preparation:-
1. Firstly heat one tea spoon of oil in a fry pan. Add cumin seeds followed by chopped onions and sauté for few minutes.
2. Secondly add chopped spinach and chopped carrots. Sauté for five minutes in low or medium flame until vegetables gets cooked well. Now add salt and mix well.
4. Further break two eggs and pour both yellow and white portions of the egg together to the fry pan to the cooked carrots and spinach. Stir continuously.
5. Now eggs get cooked soon and turns to a solid form. When eggs gets cooked, switch off flame and finally add pepper powder and transfer to serving bowl.
