Murungai recipes | drumstick recipes | Poongodi’s Kitchen explains about various dishes prepared using drumstick leaves, fruits and stems. It is a very healthy plant which is rich in calcium, iron, phosphorous and vitamins and so helps in the development of bones, teeth, immune system and increases appetite.

Botanical name for Murungai is “Moringa olifera”.

M. oleifera is a fast-growing, drought-resistant tree, native to tropical and subtropical regions of South Asia. We widely cultivate this for its young seed pods and leaves used as vegetables and for traditional herbal medicine. This also helps in water purification.  M. oleifera is considered to be an aggressive invasive species.

We call this as “Murungai” in tamil and almost all parts such as leaves, flowers, fruits and stem are edible.

1.  முருங்கை கீரை பச்சடி | drumstick leaves curry

Murungai keerai pachadi is a tasty healthy side dish which we prepare with drumstick leaves, toor dal, grated coconut, sambar powder, tamarind paste, salt and onion. We also do seasoning with mustard seeds, red chilly and urad dal.  You can serve Murungai keerai pachadi as side dish along with sambar rice and curd rice.

2. முருங்கை கீரை சாம்பார் | drumstick leaves sambar

This sambar which we prepare with drumstick leaves is a side dish for rice. We prepare it with Murungai keerai, toor dal, sambar powder, tamarind, salt, onion and tomato. The method is the same as that of preparing other sambars, but with the healthy drumstick leaves.

Drumstick leaves vadai is a crispy tasty vadai which we prepare with drumstick leaves, Channa dal, red chillies and salt. It is also called as “keera vadai” which you can serve as evening snacks for children and elders and  as side dish for lunch. Vadai becomes very healthy with green fresh murungai leaves.

We prepare this drumstick leaf chutney with healthy drumstick leaves, pearl onions, garlic cloves, green chillies, red chillies, coconut, tamarind and salt and serve as side dish with idli, dosa or rice.
