Cooking white rice | Pressure cooker | Electric cooker is the basic in learning South Indian cooking. It is very easy if you follow the ratio of rice:water which will be 1:3 normally for most of the rice varieties. If the variety is different and thin or new rice you can lessen half a cup or if it is thick or old rice you can increase half a cup. This will come in practice.

I. First let us see how to cook rice directly in a container:-

Ingredients required:-

  • rice / arisi – 1 cup {you can use raw rice (pacharisi) or boiled rice (pulungal arisi) of your choice}
  • water – as needed
  • pot / paanai – 1
  • clips – 3 number

Method:-

1. Wash well one cup of rice and soak in water for 15 minutes.

2. Take a pot and fill 3/4 of the pot with water. Boil it in a stove.

3. When it boils add soaked rice to boiling water.

4. Keep it in low flame and cook for 10 to 15 minutes. Do not allow it to over flow. (When flame is high it may over flow) When rice was cooked well, take rice in a spoon and press it with your hands. If it was soft and mashes when pressed, it was well cooked.

5. Now switch off the stove, close the pot with a lid and put three clips on one side. Leave the other side free for the water to flow.

6. Now keep the pot above another container in a slanting position as shown in the photo below. So that water in the pot will flow to that container leaving the cooked rice inside the pot.

7. After 5-10 minutes, you can take the pot and transfer cooked rice and serve.

II. Cooking rice directly in a pressure cooker:-

Ingredients required:-

  • rice / arisi – 1 cup (here too you can use raw or boiled rice)
  • water – 3 cups
  • pressure cooker – 1

Method:-

1. Wash well one cup of  rice twice and soak it in water for 10-15 minutes. After 15 minutes put it in a pressure cooker.

2. Add three cups of water to rice in the pressure cooker.

3. Close and keep it in medium flame. Once if air comes out through the nozzle on top, put the cooker weight.

4. When you get a whistle slow down the flame and keep it in medium flame for 5 minutes. After 5 minutes switch off the stove. After 10 to 15 minutes, pressure will be completely released. Now remove the weight at first and then open the pressure cooker slowly releasing pressure on the other side, opposite to the handle. You can see well cooked rice in the pressure cooker.

5. Transfer cooked rice to a serving bowl and serve hot.

III. Cooking rice in a container inside the pressure cooker. 

Here too the ratio of rice:water is the same as 1:3. The difference is pour 3 cups of water inside the cooker. Place the cooker plate with holes in it and place the container above it, where you can put rice and water and close it using a lid. Close the pressure cooker and follow the same method as above. Keep for a whistle, slow down the flame and switch off after 5 minutes. Once when pressure is released you can take the container out.

IV. Cooking rice in an electric cooker:-

Method:-

1. Place the plate with holes inside the container so that the ring will come on top. This ring is used to hold and remove the plate finally.

2. Here too the ratio of rice:water is the same as 1:3. Put rice and water in an electric cooker container.

3. Close with the lid, plug in and switch on the electric cooker to “cook”. Once when rice is cooked and gets ready the button will automatically come to warm. Rice will be in warm till you switch off and take the container out.
