Chettinad Kaaikari Thirakkal recipe | Katharikkai Thirakkal

Chettinad Kaaikari Thirakkal recipe is a side dish which you prepare with carrot, cauliflower, peas, potato, onion, tomato, coconut, spices and salt. We prepare this dish like normal kuruma but the difference here is we use red chillies instead of green chillies. This gives you a nice red colour to the dish. We serve this thirakkal in chettinad   weddings as side dish for IdliChapathi paratha  or  Puris. With the same masala and same method of preparation, instead of these vegetables we can use onion, tomato and brinjal alone and prepare another dish called Katharikkai Thirakkal.

Chettinad Kaaikari Thirakkal recipe – Ingredients:-
  • onion – 1 cup (chopped)
  • tomatoes – 1 cup (chopped)
  • carrots – 1 cup (chopped)
  • green peas – 1 cup
  • cauliflower – 1 cup (chopped)
  • potatoes – 1 cup (chopped)
  • salt – to taste

  • Grated coconut – 1/2 cup
  • red chillies – 4 number
  • green chillies – 2 number
  • fennel seeds/ sombu – 1 tsp
  • cumin seeds/ seeragam – 1/2 tsp
  • poppy seeds/ kasa kasa – 1/2 tsp
  • roasted gram/ pottu kadalai – 2 tblsp
  • cashewnuts – 4 number

Chettinad Kaaikari Thirakkal recipe – Ingredients for Seasoning:-
  • Oil – 1 tsp
  • fennel seeds/ sombu – 1/2 tsp
  • pepper/ Milagu – 4 number
  • curry leaves – few

Chettinad Kaaikari Thirakkal recipe – Method of preparation:-

1. Firstly chop all the vegetables in equal size and keep it ready.

2. Secondly heat one tea spoon of oil in a fry pan and add red chillies and green chillies. Like wise add all the other ingredients given under to grind, except grated coconut. Fry well till it turns golden yellow.

3. Switch off the stove and add grated coconut. Mix well and keep it aside to cool down to room temperature.

4. Thirdly heat another fry pan with one tea spoon of oil and add chopped onions and fry.

5. Next add chopped carrots and saute well.

6. Further add chopped tomatoes and sauté for few more minutes.

7. Now add all the other vegetables such as carrot, cauliflower, peas and potatoes and fry well till all vegetables were coated with oil.

8. Finally transfer the fried vegetables to a pressure cooker.

9. Mean while grind the fried ingredients into a fine paste in a mixie.

10. Pour the ground paste and half of the required salt into the cooker with vegetables in the pressure cooker.

11. Cook for 2 minutes after getting a whistle. Open after pressure is released and add remaining salt.

12. Finally heat one tea spoon of oil for seasoning. Add fennel seeds, pepper and curry leaves (bay leaf, cinnamon, cardomom and cloves are optional) and when it splutters pour in to thirakkal and serve.

    Yummy chettinad traditional recipe. Would like to try and share my feedback. Could you please let me know what is one cup measure in ml? ml measure will be useful for beginners like me when we do the grinding of coconut with other incredients. Look forward to your reply. Thank you

      One cup is equal to 200 ml
