Cauliflower pulao recipe – Ingredients:-
  • raw rice – 1 cup
  • caulifloweer / gobi – 1 (medium)
  • green peas / pachai pattani / matar – 1 cup
  • onion – 1 (chopped)
  • tomatoes – 3 (puree)
  • green chilly – 1 (chopped)
  • ginger / inji – 1 tsp (chopped)
  • garlic – 1 tsp (chopped)
  • pudina / mint – handful

Cauliflower pulao recipe – Ingredients for Seasoning:-
  • cinnomon / pattai – 1 inch
  • cardomom / elakkai – 2 number
  • bay leaf – 1
  • star anise – little

Cauliflower pulao recipe – Method of preparation:-

1. Firstly soak raw rice in water for ten minutes and cook in your favourite method. Add one tea spoon of oil and spread it in a bowl.

2. Mean while chop cauliflower and put it in a bowl. Immerse chopped cauliflower in boiled water along with little salt for 15 minutes.

3. Further cook green peas in boiling water for 5 minutes and keep it ready.

4. On the other hand puree the tomatoes and keep it ready.

5. Thirdly heat one tea spoon of oil in a fry pan and fry cauliflower florets in low or medium flame for five minutes. Close and allow it to cook. Then add half the amount of red chilly powder and little salt to it and close again and cook till it merges well. Remove and keep it separately so that it will be crunchy which is most important for this recipe.

6. Fourthly heat another tea spoon of oil in a fry pan and add the seasoning ingredients.

7. When it splutters add chopped onion and fry for while.

8. Onions will turn pale in few minutes and then add chopped ginger, garlic and green chilly.

9. After that add tomato purée and keep it in low flame.

10. Then add the masala powders and sauté.

11. During this processes of cooking the ingredients will shrink and now add cooked green peas and pudina leaves.

12. Now the ingredients will become thick.

13. Finally add cooked rice and fried cauliflower florets.

14. Therefore cauliflower pulao is ready and you can serve it along with any papad or raita of your wish.
