We make Blackrice vegetable salad recipe with well cooked black rice and half cooked vegetables like carrot, beans, green peas, cabbage and salt. Raw mango gives the sour taste to the salad. How ever raw mango can be substituted by lemon juice too. You can serve this as main course during lunch or dinner. This is healthy with benefits of black rice. You should know the basic things of black rice which will be harder and take a longer time (around 60 minutes) to cook when compared to white rice. You can cut down the cooking time by soaking it in water over night. Black rice also known as purple rice varieties include Indonesian black rice, Thai jasmine black rice, Chak-hao in the eastern boarder of Myanmar. Black rice is a source of iron, vitamin E, fiber and antioxidants. It is suitable for preparing porridge,dessert, traditional Chinese black rice cake, bread and noodles. Blackrice vegetable salad recipe – Ingredients:- (200 ml cup used)
- cooked black rice – 1/2 cup How to cook Black rice.
- vegetables (carrot, beans, cabbage, green peas, spinach) – 1 cup (chopped)
- raw mango – 1/4 cup (chopped) this can be substituted with one tsp of lemon juice during off season.
- coconut oil – 1 tsp
- salt – to taste
Blackrice vegetable salad recipe – Method of preparation:-
1. Firstly soak black rice in water over night, cook well and keep it aside. Refer – How to cook Black rice.
2. Secondly heat one tea spoon of coconut oil in a fry pan. Add chopped vegetables and sauté for few minutes.
3. If you were adding raw mango pieces add it next. When the vegetables gets half cooked, switch off the stove.
4. Further add cooked black rice along with required salt.
5. If you do not have raw mango add one tea spoon of lemon juice and mix well. Now you can serve this salad. This is a very healthy and yummy salad.
